how reliable is the 05 m7 compared to the 06 or 07 the 05 was lighter for some reason than the newer ones

The 05 was lighter But it was also weaker. The 06 had Ecu and Fuel updates to it + added support. Get a 06. mod it and dont look back.

still running my 05 m8 bigbore with a race gas turbo, not any problems at all.

One 05 and two 06 in the group. Haven't noticed a difference in durability in 2,000 miles. It does run a little rich but I think an adjustable fuel pressure regulator would clean it up. It doesn't have a bog and it is not any slower.
