I am going to put a used 5.3 in my 2003 Chevy K1500 because the original grenaded. This used motor has 75,000 miles on it and I am wondering what items I would want to replace or check before it goes into my truck. Thanks for any good advice.

Check main seals and compression and I think you'll be alright. Surprised yours grenaded they are a pretty bullet proof engine, my 99 5.3L had 215,000 miles without oil leaks and was fine when I sold it over a year ago and is still running.
