I wonder why your dealer would tell you that? Is there some advantage to running the D8 without the thermostat?
The thermostat in them is a 120 degree one... so it is fully open around there. In 3' of snow the past 3 weeks I've never seen anything over 121 degres on mine.

www.dynotechresearch.com Jim did a lot of dynotesting on the D-8's and found that running as close to 100 degrees made MORE power, therefore he was reccomending to gut the t'stat.
If you haven't checked out his site yet, you may want to. For only a $25.00 annual subscription there' s TONS of info, dyno tests on a lot of bolt on parts. You see real fast which pipe head works and which one doesn't.
He just did a thorough dyno test session a month ago with the 2009 DRAGON 800, made 147 H.P. with the latest re-flash and 155 H.P. with only the PC 111 with Jim's mapping.
I purchased my PC III from him, provided me with the CORRECT mapping, all for $ 365.00 shipped. Jim also actually answered his cell phone when I called with tech questions, something you don't see too often these days.
BTW, my sled is a 2007 D-7 with t'stat runs 108* ALMOST ALL THE TIME.
