Will I be happy going from an '07 800 to a '16 600?

I don't understand the question... I'd be happy riding my wife's 440 fan vs. not riding... :)

It's already been said, but 600 vs 800 doesn't really mean lighter or more "flickable". They usually weigh about the same...

What I WOULD recommend is keeping with the shortest track option if you want it easier to ride in the trees.

When my M8 chucked the clutch last year in Alpine, I rode a buddy's Summit (?) 600. I had a great time picking through the trees, finding our way around the slide. It seemed a lot easier to ride than my '09 M8. Doo runs a shorter, wider track, and I think I liked it. The E-tec 600 made great power too.

I honestly liked it enough that I'd consider one at this point. I rarely use everything the 800 has...

I've heard the axis chassis is all that... I'd probably go that route over the cat, and I'm a cat guy...

Either way, you'll be riding, so you'll be happy. :)
Good Luck!!

When reading your OP you say you are a non real aggressive rider. With that said no doubt goto the 17 600.

I had a back up sled 600 I rode a lot. It felt like an 800 almost all the time. It would fool you at times and let you think it had it all. It was only that last 50' of a climb that you were so confident in it and then the 600 would show its head. Got me a in trouble a few times but for the most part you loved the sled.

With all that has been said if I had the choice of a 07 800 or a 16 600 there would be no question, I'd be on the 600. Guaranteed the 16 600 would destroy the 07 800. Would I buy a 16 600, only if it was all I could afford. Makes me shudder just thinking about riding anything that old...
