Hi how much can one expect from a 800 HO with 50mm billet throttle bodies , 1000cc Boyesen Rage Cage, Timbersled intake, SLP full exhaust, power commander, RKT head?

I am assuming by billet intake you are talking about the throttle bodies? If so you should be right there. Remember you are 162-165ish stock so a 10 to 12 HP gain is not a stretch.
The reason you don't want an open air intake under a closed off hood is the massive air temp fluctuation that it will have. Riding in the trees in deep powder, all of your vents will be plugged off and you are building a lot of trapped heat under that hood. Then a vent opens up and your air temps drop by 50 degrees. Moving slow will have higher temps than moving faster etc etc. Your ecu will get car sick trying to keep up with all the changes and you will experience a low end bog that will leave you pissed off when you grab a handful and end up doing an involuntary headlight inspection.
